Maison Aotearoa was born from a journey that began in the south-west of France; initially for a one-year rugby contract, which blossomed into 14 years of immersion in French culinary tradition. After retiring from professional rugby, Mike completed specialist training at L’Université de Bayonne in charcuterie techniques, earned a place in the prestigious Confrérie du Jambon de Bayonne (as the only foreigner), and worked closely with French artisans with over 40 years of expertise. Upon returning to New Zealand with wife, Julie, they carried the “French-Kiwi fusion” forward, bringing authentic, traditional French meat-preservation methods to Aotearoa’s celebrated quality of local ingredients.
Guided by the philosophy “Tout est bon dans le cochon” (“waste not, want not”), Maison Aotearoa embraces a commitment to natural, additive-free charcuterie; no nitrates, no preservatives, no additives. They craft high-end gourmet products using locally sourced New Zealand meats and traditional French techniques, combining artisan authenticity with clean, simple ingredients.
