Description

The exquisite flavour of the best white tuna (also known as Albacore or Bonito del Norte) is enhanced with olive oil, adding to its soft texture and tenderness. 

Ortiz white tuna is cooked in salt water and processed by hand using traditional methods to break the tuna down. The tuna loins are carefully cleaned with a knife, again by hand, to remove any dark flesh before being cut into batons and packed into jars with olive oil.

Ortiz use traditional and sustainable fishing methods. White tuna is individually line caught locally in the Bay of Biscay during the Summer months. This selective fishing method avoids overfishing and wastage, ensuring the preservation of the species.

These large succulent batons of white tuna are ideal for salads and dishes where the flavour and texture of the substantial pieces of tuna can shine.

In 1891, Bernardo Ortiz de Zarate established Conservas Ortiz in Ondarroa, Vizcaya, Spain, located in the Basque region. Since then, five generations have maintained and improved upon the artisan methods of production, leading to a delicious, premium range of anchovies, tuna and sardines. Conservas Ortiz is now the oldest cannery still in operation in Spain.

Conservas Ortiz continues to have great respect for tradition, coastal fishing based on the tides, and the exclusive purchase of north coast tuna which are line-caught, one-by-one. Their careful handling of the fish they use yields a product that is distinguished by its high quality.
