Description
The exquisite flavour of the best white tuna (also known as Albacore or Bonito del Norte) is enhanced with olive oil and a process of aging. This enhances the flavour, soft texture and succulence of the tuna.
Ortiz white tuna is cooked in salt water and processed by hand using traditional methods to break the tuna down. The tuna loins are carefully cleaned with a knife, again by hand, to remove any dark flesh before being packed into tins with olive oil.
Following production, the tuna is left to mature in the olive oil for several years until it reaches the perfect maturity point. Contrary to what many believe, the tuna actually improves in both flavour and texture over time, in a similar way to wine or ham. Each pack of white tuna is marked with its year of production.
Ortiz use traditional and sustainable fishing methods. White tuna is individually line caught locally in the Bay of Biscay during the Summer months. This selective fishing method avoids overfishing and wastage, ensuring the preservation of the species.
A wonderful addition to salads and sandwiches or combine with Sabato egg mayonnaise, Pons capers and a splash of Forvm Chardonnay vinegar for a quick and tasty dip or spread.

In 1891, Bernardo Ortiz de Zarate established Conservas Ortiz in Ondarroa, Vizcaya, Spain, located in the Basque region. Since then, five generations have maintained and improved upon the artisan methods of production, leading to a delicious, premium range of anchovies, tuna and sardines. Conservas Ortiz is now the oldest cannery still in operation in Spain.
Conservas Ortiz continues to have great respect for tradition, coastal fishing based on the tides, and the exclusive purchase of north coast tuna which are line-caught, one-by-one. Their careful handling of the fish they use yields a product that is distinguished by its high quality.
