The ventresca (belly fillet) is the most tender, tasty and delicate part of white tuna (also known as Albacore or Bonito del Norte). This premium cut of white tuna gently breaks into large succulent flakes and is a delicacy that is highly appreciated by the most discerning.
Ortiz white tuna is cooked in salt water and processed by hand using traditional methods to break the tuna down. The tuna belly fillets are specially prepared by hand, with great care and attention by Ortiz's most skilled production team members in a dedicated room. The prized pieces of belly filet are then hand packed into tins with olive oil.
Ortiz use traditional and sustainable fishing methods. White tuna is individually line caught locally in the Bay of Biscay during the Summer months. This selective fishing method avoids overfishing and wastage, ensuring the preservation of the species.
Serve this succulent tuna as part of a tapas spread, on canapés or add to salads to appreciate if wonderful flavour and texture.

In 1891, Bernardo Ortiz de Zarate established Conservas Ortiz in Ondarroa, Vizcaya, Spain, located in the Basque region. Since then, five generations have maintained and improved upon the artisan methods of production, leading to a delicious, premium range of anchovies, tuna and sardines. Conservas Ortiz is now the oldest cannery still in operation in Spain.
Conservas Ortiz continues to have great respect for tradition, coastal fishing based on the tides, and the exclusive purchase of north coast tuna which are line-caught, one-by-one. Their careful handling of the fish they use yields a product that is distinguished by its high quality.
