A rustic and flavourful Provençal vegetable dish; courgettes, eggplant, onions, sweet peppers and garlic slowly cooked with fragrant herbs in a rich tomato and olive oil base, finished with Manzanilla olives and capers for depth and balance.
Serve warm with crusty bread, over polenta, or alongside grilled meats for a delicious, satisfying meal.
To heat: Remove plastic film and cover with foil.
- From frozen ~ Bake at 200°C for 30 minutes. Uncover, and cook for a further 30 minutes, or until piping hot.
- From defrosted ~ Bake at 200°C for 20 minutes. Uncover, and cook for a further 15 minutes, or until piping hot.
